Beef, the star ingredient of Pho, appeared in the North Vietnamese rice noodle soup in the mid 1900s when it sailed across the Atlantic with the French colonists. After the war, the south Vietnamese adapted the northern recipes with use of local vegetables, herbs such as basil, ginger, and anise to enhance that big beefy goodness; and transformed Pho into the modern Vietnamese culinary ambassador loved from coast to coast.
